Oscar seems to be making the transition from two naps to one, which is a good thing for a couple of reasons.  Number one, it gives us a bigger window, both before and after his mega-nap, to get out and do things and number two, it gives me more time to get myself ready, do whatever I need to do at home and be able to actually get on to the computer for more than five minutes.

With this new schedule, I sometimes have to pack his lunch and give it to him when we get to a class, either just before it starts or right after it’s over. Obviously, things like avocado and noodles are much harder to feed him on the road (read: he uses his hands and makes messes that I never knew were possible) so I’ve become a huge fan of these mashups.  I keep them in the fridge so they’re nice and cold (and double as a make-shift teething aid) and serve them with whole fat plain greek yogurt. Throw in some blueberries and I feel like he’s had a well-rounded meal on-the-go.  And on the off-chance we’re able to squeeze in lunch before we leave the house, these make for the perfect snack no matter where we are.
