Just like a great pair of jeans, quinoa is the perfect complement to just about anything you pair it with.  I’ve known about it for years, but have only lately gone quinoa crazy.  It’s a protein, so that in and of itself makes me feel healthy and it’s good hot or cold. Mix it with feta, cherry tomatoes, grilled corn, olive oil, balsamic vinegar, oregano, salt and pepper and you have yourself the perfect summer salad.  Just in time for the 90 degree heat that’s looming.  Not to mention, it’s the perfect leftover so I’ve been making double the amount and eating it for lunch the next day while Oscar naps (way easier than actually preparing myself something on the spot).  I’m having dinner tonight with a couple of girlfriends – guess what I’m bringing.  I know, so predictable.
