We woke up this morning with a house full of overnight guests (two adults and three children under eight) who stopped over on their way to Disneyland from San Francisco.  Oscar was loving the chaos and it clearly wiped him out.  He’s transitioning from two naps to one and I thought we could squeeze in a trip to the Hollywood Farmer’s Market before he went down to sleep.  Not the case, he was out by 10am.  Perfect opportunity to marinate the tequila lime chicken (recipe) for some Sunday night tacos (the recipe says to marinate overnight but I always forget to do it the day before).  I try to make a habit of always having fresh limes on hand because pretty much anything tastes better with lime, especially if it’s one of the main ingredients (and paired with tequila, obviously).  I like to shred the chicken, pair with corn tortillas, black beans, diced tomatoes, grilled corn cut off of the cob, fresh cilantro and a little bit of hot sauce.  Quick trip to the grocery store to pick up some fresh tomatoes, cilantro and corn and the meal was complete.  Delicious.  Just in time to watch The Grammys.
